Avocados are a great source of good fats, vitamin E, vitamin C, Fibre and antioxidants so it is a great food to include in your diet! I know eating the same thing can get a little boring so here is how to get EXCITED about avocados again!
Avocados are great in salads, with salmon and turkey etc. but how about something a little different…
STUFFED AVOCADOS!
Here are some ideas below, please try them and let me know what you think or any other ideas you have about spicing up the avocado #KSFLFOOD

First, half the avocado and remove the core then add these DELICIOUS fillings:
SLT- Tomato, spinach and organic bacon.
Chickpea treat- Chickpeas, Portobello mushrooms, shallots and top with goats cheese.
Poached egg and avocado- Put a poached egg inside and sprinkle some cayenne, salt and parsley on top.
Smoked salmon and egg- Place a layer of smoked salmon topped with a poached egg.
Mexican avocado- Shred cooked chicken, squeeze over a lime, add sweetcorn, and mushrooms!
Tuna salad- Tuna, bell peppers, and jalapeño for a little heat!
Quinoa avocado- Cooked Quinoa, chopped tomatoes, olive oil, feta cheese and parsley.
Season with salt and pepper!
My mouth is WATERING after all of that!
